our newest obsession, easy to make and ridiculously delicious, coconut gravy is happening!
one or two onions
tablespoon of coconut oil
pint of coconut milk
Chop 1 onion into long pieces. Carmelize by cooking slowly on low heat with a coconut oil in a pan (preferabbly cast iron) with coconut oil. Cook until the onions are browned and sweet.
Pour pint of coconut milk into pan and simmer, reducing slowly until gravy reaches your desired consistency.
